South Tyrolean mountain cheese · hot and subtly spiced
Beneath the natural rind, a smooth, compact paste, no holes, no air pockets. Small red and orange flecks of chili are scattered evenly through it, with no coarse pieces, herbs or grains.
Chili is the Wolfhof mountain cheese with a bit of fire: the same mild paste made from our own hay milk from Ritten, finely flecked with small pieces of chili. The heat arrives late, stays pleasant and never overpowers the cheese itself.

The variety
Taste & character
A mild semi-hard cheese made from our own hay milk, finished with chili. Natural is the base: finely chopped chili is worked into the curd, spread evenly through the whole wheel.
- Taste
- Mild and milky at first, then a clear, subtly spiced heat that builds slowly and fades again. Fruity and hot rather than burning.
- Texture
- Supple and firm to the cut, with a smooth, closed paste. Only the fine chili pieces break up the calm surface, no notable eyes.
- What makes it special
- The spicy variety in the Wolfhof range, for anyone who likes a bit of fire with their mountain cheese. The heat is deliberately measured and stays easy to pair.
